Drunken Cookies is Puerto Rico’s fastest-growing gourmet dessert brand. We don’t do subtle. We specialize in massive, gourmet Filled Cookies that redefine indulgence.

We have a strong local foothold and are now gearing up for our biggest mission yet: National U.S. Expansion. Our roadmap includes establishing a future production and fulfillment hub in North Carolina, which will serve as our primary shipping center for the continental U.S.

We are seeking a Culinary Leader, not just a baker. We need an Executive Chef to relocate to San Juan now to perfect our product and processes, creating the blueprint that we will eventually scale to the mainland.

THE ROLE

This is a Leadership & Manufacturing role. You will split your time between the "Lab" (R&D) and the "Floor" (Production). You are the bridge between a gourmet bakery and a national CPG (Consumer Packaged Goods) brand.

  • Master the Art of the "Filled Cookie": You will lead R&D. Your focus is on the perfect architecture of a stuffed cookie. You will develop bold, high-end fillings (ganaches, caramels, compounds) and ensure they maintain the perfect texture and stability inside our signature dough without leaking or dissolving.

  • Scale for Shipping (CPG): You will transition our recipes from "bakery fresh" to "shipping ready." You must understand water activity (Aw), shelf-life extension, and industrial packaging so a filled cookie shipped from our future NC facility tastes exactly like one baked in San Juan.

  • Command the Factory: This is not a hand-scooping operation. You will oversee automated production (depositors, flow wrappers, rack ovens). You will professionalize our facility, implement SOPs, and ensure we can hit 10x volume without sacrificing quality.

  • Supply Chain Commander: Managing a kitchen in Puerto Rico requires foresight. You will oversee inventory and vendor relationships to ensure we never run out of ingredients despite island logistics.

KEY RESPONSIBILITIES
  • Production Mastery: Spearhead all high-volume production, ensuring uncompromising efficiency and consistency.

  • Innovation: Act as the creative engine for new recipes, seasonal drops, and future brand extensions.

  • Team Leadership: Recruit, train, and mentor a team of pastry cooks and bakers, fostering a culture of precision and accountability.

  • Quality & Safety: Uphold the highest standards of food safety and hygiene to ensure our facility is always inspection-ready.

THE IDEAL CANDIDATE
  • Experience: 5+ years in Pastry Leadership. Preferred background: High-volume commissary, commercial manufacturing, or multi-unit operations.

  • The Skill Set: You understand Scale. You are comfortable with industrial equipment (Flow Wrappers, Depositors). You know how to take a recipe from grams to pallets.
